Those of us who are trying to live a holistic lifestyle and avoid processed foods probably spend a good amount of time in our kitchens. Most days, I start my baking and ferments early in the morning, prepping lunches by 11AM and back in the kitchen around 3:45 to start dinner preparations. Here at The Sourdough Artisan, we are big fans of ancestral eating. Food quality has declined greatly in recent years and much of this is due to losing the slow cooking methods that our ancestors used in exchange for quick food that fits hectic lifestyles.

One of the ways our diets have changed from ancient times is that we have access to already butchered meats and do not have to consume all the parts of an animal to meet our protein requirements. Our ancestors used to butcher a cow and eat the entire animal, hoof to head. This meant they consumed a good amount of tendons, ligaments, and organ meats. Tips + Tricks For Making Gut-Healing Gelatin:

  • Make sure you use unflavoured gelatin so you don’t get a beef flavor in your gummies! This gelatin is the only one I’ve ever used. It is grass fed bovine gelatin and it is highly reviewed by many nutritionists!
  • For a fun treat, use a silicone mold to create gummy bears or sour patch kids shapes! 
  • Experiment with different juices to create flavor variations. I have used blueberry and grape juice and both are fantastic. Just be sure you are using real fruit juice, not a fruit cocktail with added sugar!

Supplies:

  • Small saucepan
  • Measuring cups and spoons
  • silicone gummy mold (this is the one I used which yields slightly larger gummy bears) OR 9×9 glass baking dish
  • metal whisk
  • airtight container with a lid

Ingredients:

  • Organic Fruit Juice: Be sure to use real fruit juice, not fruit cocktails which are loaded with added sugar!
  • Grass fed Beef Gelatin powder: I’ve always used Great Lakes Gelatin. It is grass fed gelatin and highly reviewed! Gluten free, and Paleo-friendly.
  • Pure Maple Syrup: You can experiment with the amount here or sub raw honey instead! I found 2-3 TBS to be the perfect amount. My kids like them a bit on the sweeter side so I usually do 3 TBS.
  • Acai powder: Optional but has a ton of immune-boosting effects. Acai is loaded with fatty acids and fiber which are two things I struggle getting into my kids diets. The flavor isn’t overpowering when added into these gummies so it’s a win-win!

Let’s Make Blueberry Beef Gelatin Gummies!

Cook:

STEP 1: Add 1 cup of blueberry juice (or grape juice/any type of juice you want to try) and 2-3 TBS of pure maple syrup to a medium saucepan and bring it to a light simmer over medium heat. Add 2 teaspoons of acai powder, stirring continuously to dissolve. The acai powder does not dissolve completely but this is normal.

STEP 2: Reduce the heat to low and add 1/4 cup beef gelatin SLOWLY while whisking continuously with a metal whisk. The gelatin can form clumps if added too quickly so take your time. Pour the gelatin mixture into a measuring cup with a spout top. You can also use a dropper or syringe.

STEP 3: Fill the spaces of the silicone mold to the top with the gelatin mixture. You can also skip the mold altogether and pour the mixture into a small baking dish. You want the thickness of the gummies to be about 1 inch deep/thick.

NOTE: This recipe fills about 3 of the molds I linked HERE. I usually make one mold of “fun gummies” and the rest are square pieces because aint no mama got time for that.

STEP 4: You can let the gummies set at room temperature or speed it up a bit by popping the fridge or freezer. I usually flash freeze for about 15 minutes. Don’t forget to take them out of the freezer because you don’t want them to freeze solid! They will thaw out fine but the kids wont be able to eat right away which is a problem.

Store:

STEP 5: Once the gummies have solidified, pop them out of the silicone mold into a glass jar or container with a lid. I store my gummies in the refrigerator in a glass jar with a lid because that seems to keep them from drying out.

STEP 6: Enjoy gummies for a fun treat that you can feel great about! I love to grab our container out of the fridge and slip in the diaper bag for park dates and DR’s office visits. My kids think they are so fun and I’m happy with the health benefits they impart.

  1. Add 1 cup of blueberry juice and 3 TBS of pure maple syrup to a medium saucepan and bring it to a light simmer over medium heat. Add 2 teaspoons of acai powder, whisking continuously to dissolve.
  2. Reduce the heat to low and add 1/4 cup beef gelatin SLOWLY while whisking continuously with a metal whisk. Pour the gelatin mixture into a measuring cup with a spout top.
  3. Pour gelatin mixture into the silicone mold til all spaces are filled. If you do not have a mold, pour the mixture into an 8×8 pan so that the gummies are about 1-2 inches thick.
  4. Let the gummies set at room temperature or place in fridge or freezer for a few minutes to set more quickly.
  5. Once the gummies are dry to the touch, pop them out of the silicone mold into a glass jar with a lid. Store gummies in the refrigerator in an airtight container for up to 1 week.
